To complement the tasting menu, sommelier Andrey Tolmachyov has crafted three wine pairings that highlight both the iconic Champagne houses alongside smaller, modern, biodynamic wineries.

The attentive curation of the pairings serves as a reminder that Champagne wines include more than sparkling varieties and may be relished throughout the meal, beyond the clink of a toast. As is customary, guests bringing in their own wine from the region will be waived a corkage fee.

The Grand Pairing is the most exclusive of the pairings with vintages from benchmark houses that are most closely associated with the region.
