To complement the $175 ten-course tasting menu, guests have the choice to be taken on a wine pairing journey through Piedmont.

From the elegant but powerful Barolo and Barbaresco wine of the Nebbiolo grape to the less tannic and delicate Barbera, the marriage between fruit and earth bring a distinct constitution to Piedmontese wine. Wine is a quotidian affair in the small region where the super floral, black cherry, anise, and dried herb notes of its reds are enjoyed while the wine is young but still pleasurable. Expect Arneis and Timorasso paired with earlier courses and to wind down with a Moscato. We also invite you to bring in a few bottles from your own amazing collection of Piedmont. Wines from the region will be waived our usual $50 corkage fee.

The mountainous topography dotted by hills and plains contributes to the expressions of wine found in Piedmont, from the high acid and tannins found in Nebbiolo varietals to the more feminine Barbera. The classic pairing indoctrinates the palate to the dedication and wisdom of the region’s winemakers, and where tradition reigns supreme.

Maude Piedmont Wine Pairing

The reserve pairing deepens the tasting experience to include premium Barolo, Barbaresco, and Dolcetto reds and lends a greater complexity to the region, featuring more exclusive bottlings and rarer vintages. Touchstone vineyards with some of the earliest plantings of Riesling in the region to single-vineyard bottlings sets apart this thoughtful pairing.

The Grand Pairing is the most special selection with some elusive choices from the most revered winemakers of Piedmont. From old houses to more modern estates, back vintages from the highest quality producers exemplify these pours which will engage the oenophile and provoke unexpected wonder from the wine novice.
