Using the world’s great wine regions as our inspiration, we take a deeper look into an individual area and bring you a ten-course degustation menu that reflects the traditions, culture and authenticity of each region.

The Maude culinary team will design four menus per year around four different wine regions of the world. Our debut Rioja is spectacular. With a reputation for outstanding produce which provides the foundation to its simple yet quality driven gastronomy.

Rioja’s abundance of wonderful locally grown produce such as red bell peppers, garlic, artichokes, mushrooms, asparagus not to mention beautiful lamb, game and goats cheese provide such an inspirational platform to curate a menu.
