Wine Pairing Menu -- Tuscany Italy
The framework of our wine program is to define our chosen region by showcasing beloved, traditional producers punctuated with newer, obscure, off-the beaten path winemakers. Wine director Andrey Tolmachyov makes a point to steadily shape the three wine pairings to highlight trip standouts, introducing guests to new houses alongside old favorites. As is customary, guests bringing in their own wine from the region will be waived a corkage fee.
The classic pairing is an introduction to the grapes and wine regions of Tuscany. Sangiovese, Tuscany’s most prominent grape, is the darling of the Chianti, Brunello di Montalcino, and Vino Nobile di Montepulciano regions, while Vernaccia grapes are the basis for the region’s whites. The dessert course leads to the dessert wine Vin Santo.
The reserve pairing deepens the tasting experience to include premium pours with a greater complexity to the region, featuring more exclusive bottlings and rarer vintages. Delve deeper into Cabernet Sauvignon, the backbone of the Super Tuscans, and pours from houses such as Monteraponi, Poggio di Sotto, and Fontodi.
The Grand Pairing is the most exclusive of the pairings with vintages from benchmark houses that are most closely associated with the region. The portfolio is an indulgence of wines which are complex, with phenomenal depth and texture, venerating the grape and history of the region throughout the entire process.Reservations
