To complement the $125 tasting menu, guests have the choice to be taken on a wine pairing journey through the expanse of Sonoma wines with three optional wine pairings from head sommelier, Andrey Tolmachyov, that veer from convention but respects the full range of grapes grown in the region.
The list of wine produced in Sonoma is extensive including Pinot Noir, Chardonnay, Cabernet Sauvignon, Zinfandel, Sauvignon Blanc, Merlot, Syrah, Pinot Gris, Viognier, Pinot Blanc, Cabernet Franc, Sangiovese and Petite Sirah.
As Sonoma is the largest California wine county with over 425 wineries and over sixty grape varieties, the classic pairing is a beginner’s course in the region. Featuring wines from Ryme Cellars, Failla, Peay Vineyards, and Littorai, known for its Pinot Noir by highly respected winemaker, Ted Lemon.
The reserve pairing deepens the tasting experience to include premium pours with a greater complexity to the region, featuring more exclusive bottlings and rarer vintages. Expect wines that are refined, subtle and exciting with highlights from Copain and its traditions and practices of French winemaking.
